How to Bottle & Flavour your kombucha

If you’ve come to this post, you must have finished a batch of kombucha – Congrats!

Now it’s time to bottle your brew. You can bottle and drink your kombucha straight away or get a bit creative with a second fermentation to add new flavourings and create natural carbonation.

If you want to bottle and store your kombucha to drink straight away, you just need to follow a few easy steps.

Bottling your kombucha plain

First, with clean hands, remove your SCOBY and about 2 cups of kombucha from the top of your brew. This will be your starter tea for your next batch. If you are ready to start your next batch right away, you can temporarily place this in a glass or plastic container. If you are taking a break from brewing you can follow our instructions of how to store your SCOBY(s) here.

Next, grab a funnel and bottles. Using the funnel, pour your finished kombucha into the bottles leaving about 2 inches of space at the top. Pop them in the fridge and enjoy as you like!

A second fermentation

Follow the steps outlined above, but before you decant your brew into your bottles, you’ll first need to add some flavourings. You can find a few of our favourite recipes here.

You can add anything you like, the world if your oyster! The general rule of thumb is to put about 1 to 2 tbsp of fruit or herbs into your bottle. This can be solid, chopped, or juiced. Keep in mind, the added sugar will make the yeast excited and will create a lot of pressure in your bottles – so be sure to use bottles that are designed to withstand high pressure. Kombucha bottles have been known to explode and can be super messy if too much pressure builds up, or are opened while the bottles are warm.

Once you have added your flavourings, pour in your kombucha-leave 2 inches of space at the top. Cap your bottles and leave them in a warm place out of direct sunlight for about 1-3 days depending on how much carbonation you want.

Before you open your bottles, put them into the fridge to cool them down, and reduce the possibility that they will explode.

Next, if you added whole, chopped pieces fruits or herbs filter these out with a sieve or cheese cloth, re-bottle your brew, pop them in the fridge and enjoy!
