Some of our favourite kombucha flavours
The second fermentation is an anaerobic fermentation process (without oxygen) that is used to infuse additional flavours and carbonation into plain kombucha. By putting your kombucha through a second fermentation you can create some really fun and interesting flavours.
I tend to keep flavourings pretty simple. Most of the time, my brews are flavoured with whatever I have on hand. Even the tiniest additions can develop incredible flavours. A second fermentation completely changes the taste of the ingredients and the transformation leaves me smiling every time!
So have fun and experiment with different fruits, veggies, herbs and spices.
Here are a list of some of our favourite recipes.
These recipes are for 500ml bottles but can be adjusted depending on the size bottles you use.
Mountains in Springtime
- 5 sage leaves
- 5 mashed blackberries
Blue Ridge Mountains
- 5 blueberries
- 4 Sage leaves
Storm in the Desert
- 2 tsp turmeric
- 2 tsp honey
- 1 tbsp orange juice
Country Roads
- 3 chopped strawberries
- 5 basil leaves
Summer Shandy
- 5 Mashed Raspberries
- 1 tbsp lemon juice
- 5 mint leaves
Thai Tea
- 1 stick lemongrass (crushed)
- 1 inch chopped or grated ginger
- 5 Thai basil leaves
Prickly Pear
- 2 Tbsp diced (soft) pear
- 2 tsp honey
- 4 sage leaves
Nomannic
- 1 dried cinnamon sticks (crushed)
- 2 tsp honey
- 4 Smashed blackberries

- 2 Tbsp chopped carrots
- 1 inch grated turmeric
- 1 inch grated ginger
